"The complicated thing was to maintain its shape, and to preserve the aquatic texture," he explained this week after the success.

The solution was found in the mixture of water from natural sources and agar powder (a vegan jelly) . Eureka! But then the real problem appeared: how to transport such a fragile plate? Wong can do between 50 and 100 Raindrop Cakes in his kitchen in about four hours and then he has to pack each one individually in special boxes that prevent them from moving so that they arrive intact at the point of sale. For now it is only available in the markets of Smorgasburg at Williamsburg and Prospect Park , but Wong hopes to expand distribution soon.

WHAT DOES IT TASTE LIKE?

Like the raindrops that taste little, wong , the son of a confectioner, serves the dessert accompanied by brown sugar syrup and kinako (toasted soy flour) that enhance the taste of the water. Anyway, the important thing is not the flavor, nor the nutrients, he says, what we are talking about here is textures . And no, they are not gelatinous textures.
