The contest will have three categories: ripe fruity extra virgin olive oil, intense green fruity and medium green fruity.

Once the documentation has been presented, it will be the Delegation of Sustainable Economic Development of the Diputación de Málaga who will be in charge of carrying out the collection of the necessary samples in the entity registered in the contest and to proceed to the sealing of the corresponding deposit or deposits.

In total, they will collect four samples for each oil that is presented: one for sensory analysis, another for physical-chemical analysis in the specialized laboratory, the third will be reserved as a safety sample and the fourth will remain in the oil mill or production company itself. Each one of them will be sealed and will have a label on which the name of the contest, announcement, date of sampling and identification code with two numbers referring to the oil mill and the prize category must appear.

Subsequently, once the sample collection process has been completed, the Award Secretariat will assign a number to each of them, correlative and replacing the identification code, so that the tasting can be done blindly without any reference to the origin of the sample.
