enter the restaurant The Garden of Carabana , at number 32 Calle Lagasca, is reminiscent of Mondrian's Broadway Boogie-Woogie. We are greeted by an elegant grid with mirrors, part of the decoration with the imprint of Leal Pepe in blue and gold. Flowers jump from vases to sculptures on the wall. Nothing is left over and all that remains is for the gastronomic show to begin.
This trip begins 50 kilometers from Madrid, in the Las Vegas region, on the banks of the Tajuna River , in a family garden where experiments are carried out to recover the flavors of the vegetables of a lifetime. Behind it is Roberto Cabrera (ex Santceloni), "whenever we talk about the success of the Mediterranean diet and how healthy it is, we don't always remember that it is mainly based on vegetables and legumes ”.

TOMATOES LIKE OLD
Here the menu is marked by the land. "We change the menu almost daily depending on the vegetables that the garden gives us, in the month of July we have incorporated the Moorish tomato, our star product ”, explains Cabrera.
In this journey from the garden to the kitchen, he is also accompanied by Ricardo Alvarez (executive chef, 14 years in Santceloni and since 2007 second chef) .

Together they created one of the most surprising proposals on the menu: broccoli carbonara classic . “It is a dish that has enchanted us from the first day, we like it because we take advantage of the stem, a part of this vegetable that we do not usually cook,” says Cabrera. Its very thin slices of broccoli are served with the traditional Italian sauce and a freshly grated truffle . Enjoy another Italian wink in the form of a delicate freshly baked focaccia with seal of the Panotheca.
The seconds do not disappoint. Choose from wild fish ( its mere, true, it is a spectacle ) or mature meats (his shank has a club of followers).
In its most informal version, which is accessed by George John 18 , you can taste delicatessen from breakfast to dinner non-stop: rice, stews, croquettes, vegetables... with an average price of 25 euros.
