The restaurant of the week: Cataria
Cataria is the translation to the south of the Elkano restaurant in Getaria and its philosophy of the culinary landscape and the marine terroir. And yet it is very different.
For it Aitor Arregui , alma mater of Elkano, and paul vicari , his right-hand man, have had two talented youngsters, Carlos Hernandez as chef and Edward Perez at the front of the grill, and with the impetus that the Iberostars hotel chain has wanted to breathe into its Andalucía Playa in Chiclana after its recent remodeling.

Temporality and territory in which new vectors are introduced in Cataria: on the one hand, extensive knowledge of the surrounding fishing areas and the best places to catch each specimen and, on the other, the study of the anatomy of each animal seeking to exploit and enhance its virtues.
To do this, they dissect and explore each piece in search of unprecedented flavors and textures. Fins, cheeks, cheeks, livers or lips suddenly become delicacies.
The care for the product
In the command commands the sea and every day starts from scratch. Shrimp, nettles, lobsters, tuna, moray eels, snappers, enlisted … The entire catalog of past local marine fauna, without prejudice or preconceived ideas, for the wise sieve of fire and embers.
The wine list contains interesting wines from the area and a respectable selection of Champagnes but it is worth putting yourself in the hands of Lucia Fuentes , authorized voice in the room.
Creativity in Cataria
Own Iberostars Andalusia Beach is an excellent option to stay in the area, as is its neighbor the Melia Sancti Petri which also houses the Alevante Restaurant by Ángel León from Porto.
Take advantage of your visit to visit other interesting restaurants –of a more traditional nature– in the area such as Venta Melchor in El Colorado or Francisco, at the foot of the beautiful Fontanilla beach, or visit the nearby Primitivo Collantes winery and taste its excellent Chiclana wines.
