He joined the initiative of the couple formed by Dana and Olivier Castagne, she is of Indian origin, he is French, who after passing through London, came to Madrid and missed a good takeaway proposal. “In London, as happens in Madrid, people eat out a lot and at this time they had noticed that there was a void. There are many platforms and they have tried all of them –because they don't usually cook–, but they fell short of quality”, explains Turbot, who puts his 15-year experience in the kitchen.

(B) owlers is his answer in which They combine different trends in the concept of it, such as that everything fits and tastes better in a bowl. "Because it travels better, because it stays warm, because the flavors mix better" they explain in his philosophy. That bowl, of course, like the rest of the packaging, is made of paper, rice paste or corn, all biodegradable.

In addition, its number one maxim is quality: “The seasonal, local, healthy product is taken care of.” Eggs are organic free-range chickens, beans from Tolosa, the beans with denomination of Aragón… And the cuisine is honest, visible to anyone who, instead of ordering through the web or its app, comes to their premises in the heart of Madrid.

His proposal, moreover, is divided into three to respond to very varied tastes. First, (B)owlers, which is international cuisine: “With dishes from all over the world: Indian, more Japanese, more Spanish, Italian…” says Turbot. And from seeing the demand of their clients, they create plants with a letter without animal protein, only based on legume and vegetable stews; Y salvatore, that brings together all his Italian recipes: gnocchi with pesto, ricotta and spinaci ravioli, mushroom risotto…

Or why call. because you could order something different every day: start Monday with a salmon poké and Tuesday go for the Indian-inspired butter chicken; on Wednesday continue with the thai curry and on Thursday a niçoise salad. And the bowl arrives so beautiful that it is a shame to eat it, as they have already been told. "But you have to eat it: food can be beautiful, but it is ephemeral," says Turbot.
