off the coast of norway
We are fascinated by that of living Under water -or floating in it!- so the submerged restaurants have been dominating front pages (and traveling wet dreams ) for years. However, until now, you had to travel to remote land to be able to experience what it was like to walk through its doors... But that's over.
In 2019 it will open the first establishment of this type in Europe, specifically, in the town of Baly, in Norway. Your name? Under, and not only because in English it means "underneath"... it turns out that in the Scandinavian language, it is also translated by "Wonderful".
"Under has been designed with sensitivity to its geographical context and its aquatic neighbours", they say from the architecture studio ** Snøhetta **. Their idea is that the building itself becomes a shellfish reef that serves for filter seawater and, consequently, to attract new marine life to purified area. At the end of the day, this will be the true spectacle of the dinners, of which we will be privileged witnesses through the enormous window of 11x4 meters by Under.
Marine life
Under is also intended to serve as investigation area and dissemination center, so that it will have a scientific team to study the underwater life of the area. In addition, everyone who comes to eat will find panels in which aspects related to marine biodiversity and the country's coast.
More than just a restaurant
FROM THE SEA TO YOUR TABLE, LITERALLY
The kitchen, meanwhile, will be run by the Danish chef Nicolai Ellitsgaard Pedersen , which will cook locally sourced fish and seafood. That is - cover your eyes vegetarians - than the same cod, lobster and mussels that you see through the window will end up, at one time or another, on your plate. will also be served "truffle seaweed", a type of aquatic plants from the area whose flavor is reminiscent of this food.
From the sea to your table... literally
The restaurant will have three levels: the first, still above the sea, it will be the wardrobe; the second, at the ocean level, will house a champagne bar ; the third, underwater, will finally contain the restaurant. Each of the plants will evoke the environment by which it is surrounded through its colors and its materials , which will be sustainable and locally sourced. We want to book now!
