“I grew up as a cook in the restaurant Echaurren from La Rioja I started there with 14 years . Then I went to the Basque Country to study and worked with almost all the Michelin stars from San Sebastián (from Martín Berasategui, through Mugaritz to Akelarre). “We are four people who are very close, and each takes care of a different aspect of the restaurant Whether it is the business, kitchen or cocktail area, in short, we do not overlap. Any decision is put to a vote between us and we are 25% each of the business. We are all one, a family that has been growing over time and that today we understand each other and work in the same direction”, says Giraldo.

The name of the place it was not random and you could not contemplate any other in any way. As Sergio Giraldo acknowledges: “When we rented the space, it was a tailor shop**. The first decoration option was to do something that looked like a fabric store, but the Masquespacio studio arrived and broke with all our schemes. The last part (and maybe the best of all) is the one known as 'The Market' (or what is the same, the back room), located to one side of the kitchen and with a separate door to the main one, with hanging salted fish and cooks cleaning the product . "It will be an authentic space to welcome the client, where the first steps of the tasting menu always keeping in mind that we have adapted it to continue with the currently recommended sanitary measures, but that it will still be just as authentic.

“From the beginning, when they presented us with the project they wanted to carry out, we had a very good connection and we were immediately enthusiastic. They were not looking for the conventional, but quite the opposite; they were looking for something that would break with traditional patterns . There was no doubt that we wanted to be part of their dreams”, they tell Traveler.es from Masquespacio.

In the part of the bar more focused on street food the studio wanted to have the influences of the sea , representing a bar in the Cabanyal-Canyamelar neighborhood.

“It clearly has its inspiration in the beautiful facades that the neighborhood shows off and that are represented in its design in a more contemporary way. So when you enter you can see tiles everywhere, of different colors and patterns that we have custom designed for the project ”, they say from the studio itself.

Once in the kitchen, a great wave welcomes you, giving way directly from the neighborhood to the sea. All the tiles in the premises -as well as the great wave in the restaurant- have been created by hand by potter Amparo Camps and the result could not be more evocative.

Geometric shapes and a great variety in the polychromatic range

"What here the protagonist is the cook , we find a open kitchen of relevant dimensions and in which the restaurant guests will be able to see Sergio and his team preparing the food. It's like you're eating at sea ”, they acknowledge from Masquespacio.

The confinement has allowed us to prepare, test and decide on the entire menu that will change with each season. And as the days and weeks go by, we will continue to innovate in the gastronomic part. And once the gastronomic experience has been reviewed, it is time to give the relevance it deserves to the decoration and interior design of La Sastrería , which has been commissioned by the Valencian design studio Masquespacio . He has been creating projects for 10 years that are pure fantasy where geometric shapes and the great variety in the polychromatic range take on a special role in each of his proposals.

Although their mark can already be found distributed both inside and outside our borders, in Valencia they have signed establishments such as Rubio's notebook shop (Sorni Street, 9), the gnome gift shop (Cuba street, 32) or kaikaya restaurant (Town Hall Square, 10). And now it's time for the tailor shop.

From Masquespacio they define themselves as "a creative studio specialized in interior design and product design with an innovative approach in each project with the goal of creating unique experiences for people who live our designs ”. And boy have they created it.
