The new gastronomic concept of Madrid

At The Rhum Bar you travel to a colonial Caribbean

The first feeling when entering The Fifth Marquis of Concordia is that you leave Madrid. Despite being close to the noisy Avenida de América, climbing the steps that separate it from María de Molina and entering that space of white and wood tones, you move to a Caribbean island in a colonial past. The Rhum Bar It is the latest novelty within the great renovation that has been made of this mansion in the heart of the Salamanca district. It occupies part of the first floor of the place and in the background to the right is the bar where, among the 50 most exclusive rums in the world, awaits Suley Dotres , who left Cuba for Europe as a young boxer at the age of 17 and is now a master bartender, although his interest in cocktails also comes from his native Cuba.

“One of my grandparents' best friends was the school teacher. Hotel School of Seville, who, in addition to being a well-known and admired man by his students and a renowned bartender who was called 'El Profe', says Dotres. At the age of nine or 10 he began his contact with cocktails and now he has returned to being in an environment where rum is the king of the bar.

Suley Dotres is in charge of preparing rum shots in sipping version, because some of the ones he has in his bar do not need to be mixed, but he also has a An interesting list of traditional and own cocktails . If you ask him he will tell you that the "classic and very stately" Old fashioned It is one of his favorites. But also the Sister Isles , prepared with the house rum of the same name, distilled on the tiny and exclusive island of St. Kitts & Nevis, of which only 16 bottles a year are made right now. “It is a perfect cocktail to share in a good chat and with friends”, says Dotres, master of rums, but also of chats.

And for those who want something 'virgin', another of Dotres's specialties It's Jamaican water , an incredible purple non-alcoholic cocktail with hibiscus and cinnamon.
