Well, about Sam and his interest in organic cooking and about the Angel Gutierrez , founder of Volapie Tavern , was born three years ago the first Organic Market & Food : a conclusion to the insatiable search for a healthier and more natural diet. The first was in Marbella and now it is Madrid's turn. Nothing more and nothing less than 1,300 square meters dedicated to 'Healthy way of life'.

Under the office tower Serrano 240 this is found multispace that surprises as soon as you walk through the door. The first floor is occupied by a market for organic products, where the best seasonal fruits and vegetables find their way along with sourdough bread from the bakery Proust's Magdalene , take-away food and endless products from seeds, muesli or bars to plant-based proteins, agave syrup and organic wines and cavas.
And why this store space? “Because there are clients who take a bowl of hot oatmeal with fruits and seeds and sometimes they don't know where to find these products. Everything we use for our dishes we also sell in our market”, says Samantha. All this without forgetting the decor which is synonymous with an atmosphere of well-being and good taste based on wood, green colors and recycled furniture.

The second floor gives way to restaurant , a charming terrace where will there be live music, reading area and a space dedicated to the smallest of the house with wooden toys, fruits and vegetables, costumes and books . “Here we want the kids to be entertained while the parents relax,” says Samantha. Yoga or tai chi classes, meditation, workshops to learn how to manage stress and everything you need to build a full and happy life.

Breakfast with açaí bowl and fruits, matcha with crunchy superfoods , chia pudding with mango, passion fruit and muesli, smoothies, juices and vegan pancakes, but also options such as toast and organic eggs. The Florentines and the Benedicts are a hit on the menu . For lunch or dinner you can opt for their menu flexitarian which includes dishes such as marinated wild salmon, fresh vegetable red curry, chicken wrap or a vegetable burger, among others. They also have a vegetarian or 'plant-based' from which to savor a lasagna raw-vegan or black rice with mushrooms and coconut . It will be very difficult to decide! For dessert, try one of their organic cakes without refined flour or sugar.
