In the last two years, the opening of a vegan restaurant in the capital always led to two types of premises: the restaurant for hipsters where each dish is so sophisticated that it seems taken from another galaxy yet to be discovered, or the extremely aseptic vegan space that you seem to be eating in the waiting room of a futuristic hospital. Though there are always wonderful exceptions, and one of them opened a few months ago in the capital: El perro hooligan .
Four years ago, Virginia Mayo, a convinced vegan and cook in body and soul, decided to open a recipe blog where she organizes her own vegan creations. After touring the kitchen of a resort in Greece and the catering tricks of a chef from the London neighborhood of Camden, he lands in Spain, goes through the classrooms of Ana Moreno and embarks on El perro hooligan, possibly the most homemade vegan bet of the capital. “The idea was to rescue the recipes of a lifetime and make them 100% vegan, and I think we have achieved it” , tells us enthusiastically Virginia.
The place could not attract more attention, flowery and colorful like a Cordovan balcony that almost watches over the Segovia Viaduct from below. Its interior, unpretentious, warm and with vintage details, quite small but, above all, very comfortable.

“The specialties of El perro hooligan are croquettes and tortillas, all of them vegetables. Every day you can find different types of croquettes, depending on the vegetables we have in season or depending on the inspiration we have” says Virginia. There are no essentials like the one with spinach and Medjool dates, the one with aubergine, mushrooms and teriyaki sauce and, above all, the one with Iberian tomato with spices. In the tortilla universe, the paisana or pumpkin, curdled with chickpea flour, are among the favorites.
Other fantastic dishes that make El perro hooligan an essential are the Russian salad, linked with a creamy vegan soy milk and capers and his 'cheese trio', a small gastronomic game that allows you to travel through cashew cheese, raw almond sobrassada and pickled hummus. In addition, Virginia adds: “If you are a hamburger fan, don't hesitate to ask: the lentil and mushroom burger is one of the most popular dishes”.

In desserts we can forget about the boring sophistication of the millennial vegan to recover traditional donuts and spectacular banana and chocolate cakes. The perfect opportunity to return to grandma's kitchen, to go back in time to our childhood and rescue almost extinct flavors.
