Every day you can find different types of croquettes, depending on the vegetables we have in season or depending on the inspiration we have” says Virginia. There are no essentials like the one with spinach and Medjool dates, the one with aubergine, mushrooms and teriyaki sauce and, above all, the one with Iberian tomato with spices. In the tortilla universe, the paisana or pumpkin, curdled with chickpea flour, are among the favorites.

Other fantastic dishes that make El perro hooligan an essential are the Russian salad, linked with a creamy vegan soy milk and capers and his 'cheese trio', a small gastronomic game that allows you to travel through cashew cheese, raw almond sobrassada and pickled hummus.
