Blessed summer! Heat, sun, holidays and... ice creams! If we have already been telling you what is new for this season, today we bring a new one, a ice cream and brioche pop-up of the great confectioner Ricardo Velez . You will melt with pleasure!

Let's start by telling you what it is The Pâtissier . It is a multipurpose space, dedicated to teaching courses and tastings that has been operating for two years. But it is also a versatile space that over time has hosted ham presentations, perfume tastings, meetings... And now, once again, the space mutates to become a summer pop-up dedicated to ice cream and brioches.

Ricardo Vélez, puts all his creativity to work and hits us once again with his know-how. Let us remember that he is one of the greatest exponents of confectionery in our country, which was National Gastronomy Award in 2014, Award for the Best Pastry Chef in Spain the same year and Prix au Chef Pâtissier Internacional in 2017.

But not only the awards guarantee his work, but also the simple fact of going through his mother house, Moulin Chocolate , assures you high doses of sweet pleasure.

We talked to the creator so he can tell us what The Pâtissier is about. “We always had the idea of ​​setting up a Temporary ice cream and brioche shop. Ice creams because it is what the body asks for in summer and brioches because we wanted to give rise to a traditional confectionery mass that is maligned in the background. We want to make them trendy”, says Vélez.

And so they have given rise to a space that will work the months of july and september -in August they rest- in which these two elements are the protagonists, sometimes merging - ice cream filled brioche -, in others shining by themselves, as is the case with salty brioches, something that customers always demanded.

“The idea is that you take it and go enjoy it in the Withdrawal. We are only two steps away and here we make products to take away, also in the form of snacks, which ensure an idyllic day in the park”, says the pastry chef.

The Pâtissier It has a showcase where you will find different types of brioche: filled with chocolate cream and covered with more chocolate and almonds, another made with praline cream, also filled with lemon with flambé meringue or vanilla covered with caramel.

But that's not the end of it, because they also make other different ones available to customers, with the dough crowned in the center with violet and blueberry coulis, cheesecake, peach and vanilla or banoffee.

Without forgetting the cream sneakers , a heavenly creation of halved brioche and filled with freshly whipped cream. And of course the salty brioches of salmon and mango or pastrami and pickle, among others . To accompany them and pass the drink, a selection of natural and super refreshing drinks : red fruit punch, lemonade with mint, mango and passion fruit juice or strawberries and limes.

Next to them, the ice creams. “I have chosen the six flavors that I like the most: Piedmont hazelnut, guanaja chocolate, lemon pie, Mara des Bois strawberries, vanilla with Havana7 -which is very reminiscent of a Moulin Chocolat dessert- and meringue milk with bacon from heaven”.

Along with them, the possibility of ordering them in individual tub, 350 ml or 635 ml . If you want to make the experience round, ask for it with a cone of homemade or Sicilian waffle, inside a brioche dough.

“At The Pâtissier and Moulin Chocolat we have a rule: if we don't make it ourselves, we don't sell it” , boasts Velez. And it is that here even the waffle is made by hand, one by one and 100% homemade.

In short, The Pâtissier is going to become one of the places to be this summer in Madrid with creations that will not leave anyone indifferent...
