trikki is the project of Yuliet McQuitty – from New Orleans - and Rodolfo Rodriguez -Venezuelan chef-. They themselves define their premises as a “artisan restaurant” , since everything is 100% fresh, even the Mayonnaise . Also the decoration “is homemade ” and it is the work of Rodolfo, who being musician, he wanted to add his touch, recycling a battery and using all the boxes of it to create some high tables of the entrance and some fun lamps for the ceiling.

The facade, with its wooden shutters, is that of a typical New Orleans house, and represents a declaration of intent. "Here comes to savor the real and homemade dishes of Cajun gastronomy in a relaxed atmosphere”, explains Rodolfo.

A small aside for the less erudite: Cajun cuisine is that of the descendants of displaced French-Canadian , expelled from Acadia after the incorporation of the French territories in Canada to the British Crown, which is mostly in the State of Louisiana . The "holy trinity" of this gastronomy are green pepper, spring onion and celery. These three ingredients, along with the remoulade (a traditional French sauce made with mayonnaise and white mustard), are the base of almost everything.
