Precisely because the philosophy of El Porrón Canalla, with their sandwiches and their porrones, is to share, Juanjo López has joined the association A start for all, which helps children with problems of social exclusion, in an initiative that will complete the usual menu throughout the summer. Every Thursday until October 13, a renowned chef will create a unique sandwich from which 100 unique units will be made.

Among the names that have come up with these unique and charitable sandwiches are, Quim Casellas from Casamar, Stefano Cerveni from Due Colombe and Javier Goya, from Triciclo . In September they will take over, Hugo Muñoz from KBK Aravaca, Silvio Salmoiraghi from Acquerello, Nacho Manzano from Casa Marcial and Mauro Eli from Il Cantuccio . And to close this initiative Umiko and Javer Estévez from La Taquería. The only instructions they have been given when creating their signature works, “their plate between breads”, is that they be “simple and for everyone”, says Juanjo López.

The association A start for all is dedicated to working with kids who have had difficulties and trains them in restaurants and hotels so that they can find a job and a goal. They get internships in popular restaurants and with well-known chefs, and the ultimate plan is to create their own hotel school on the motto “Love and serve” . Serving, helping and restoration are concepts that go hand in hand.
