Ibiza It is a spectacle of nature that never fails to make those who venture to explore it fall in love. and there are small corners and characters that make its beauty even more unique, surrounding it with myths, stories and that spark that no other corner of the world has managed to emulate. And that they have tried ad nauseam.

In gastronomy, tradition has always known how to coexist with fashion, who have always boasted of attracting the public based on excess and pomposity.

But not this summer, in which simplicity of luxury has made the splendor of the white isle shine even brighter thanks to Jondal , the new restaurant where Rafa Zafra –Estimar and Heart Ibiza– makes a display of culinary means in a most spectacular location with views of the sea and a "room" in which the tables almost touch the shore of the sea.

"For us it was a dream to do our own summer beach bar . Being able to recover the essence of those of all life, of the places that marked our childhood but offering a quality product ", explains Zafra of this new adventure.

"We didn't want a restaurant on the beach, but a real snack bar to which, applying our gastronomic knowledge and philosophy of life, we could create something different from what exists until now", he continues. "Without a doubt, I think that the most difficult part of this project has been achieving the simplicity as something sophisticated".

In this project is involved the restaurant family Estimate , like Ricardo Acquista, Anna Gotanegra, Raza Zafra and his wife. In the creative part, the idea and the philosophy of the concept, more partners are added. One of them is Victor Sharp , one of the benchmarks on the island with more than 30 years promoting many of the most successful projects in Ibiza.

Jondal is located in a unique setting in the south of the Island of Ibiza, in Cala Jondal. It's a space surrounded by Mediterranean forest , conjugated with a turquoise Mediterranean sea that is complemented by Oro del Negro and its design studio More Design.

"The goal was to keep the building –where Es Savinar used to be, a beach bar dedicated to rice dishes and paellas– as authentic as possible. The use of natural, real materials and a direct approach and simple towards functionality has achieved exactly this", explains Zafra.

On the terrace of the restaurant, calm comes from a light and beachy vibe , covered with old trees and light burlap candles, pure and close to nature. While the building is an old Ibizan house.

"The first thing you see when you enter is the spectacular open kitchen with all its dynamics, noise, smells and colors," says the chef.

At Jondal cooking is serious, but enjoying it seeks to be fun. Beyond a beach club, which is everything that it does not pretend to be, there is a family atmosphere in which the service casually flees from the protocols. It is not a place to come just to eat, but also to enjoy the experience, the beach, the relaxed atmosphere and, of course, the food.

"It's nice to meet people from different places, although we have managed to capture a national public , which was the most difficult. In addition, for us it is also very important to see the DJ, the famous footballer, enjoy, but to do it seeing whole families next to each other, with their little ones playing after lunch, they also have a good time," Zafra points out.

If in Estimar the protagonist is Pescadors de Roses, owned by Rafa Zafra's father-in-law –which supplies the restaurant with the best produce from the Costa Brava and the Mediterranean–, in the case of Jondal it is the local product such as prawns, Norway lobsters and all kinds of fish and shellfish, which have more prominence in elaborations that fully respect its essence and purity, with no more than four ingredients per dish.

Also, they are ten products that are offered in the letter , in three different firings being the Red shrimp the queen of the house, sharing the throne with the scorpion fish or rotja. In the wine section, wines have been selected according to a warm Mediterranean climate with bubbles, fresh whites and rosés from the Provence court.
