The contest, organized by the Association of Cooks and Pastry Chefs of Madrid (ACYRE Madrid) , was held this Monday, March 7, at the Center for Gastronomic Innovation of the Community of Madrid.

Second place went to Simon Acevedo Reyes of Black Label Tortillas and the bronze medal has gone to Victoria Maseda Rodriguez Masseda Catering.

ONE TORTILLA TO RULE THEM ALL

Participated in the contest more than 20 proposals, of which, only 8 have passed to the grand final. The requirements to meet? That among the mandatory ingredients there should be, at least, three products with the M for Certified Product , the brand that guarantees the origin and quality of Madrid Foods.

The eight finalists have been: Tony Perez from Txirimiri, Manuel Gonzalez Cordero of The Omelette Madrid, Asier Hita from Lucia's Tarantin, Alfonso de Zulueta from Bar Minizulu, Yohandra López from Hotel Opera, Simon Acevedo Reyes of Black Label Tortillas, Domingo Dugarte of The Rita, Victoria Maseda Rodriguez of Masseda Catering.

The jury was made up of various personalities from the gastronomic universe: Carmen Carro (cook and owner of Pedraza Tavern), Nino Redruello (cook and owner of The Wide Group), carlos sierra (chef of Poncelet), Sergio Lopez , (managing director of the Madrid Institute for Rural, Agricultural and Food Research and Development, iMiDRA) and specialized journalists Cristina Rodriguez and Concha Crespo.

WHAT IS THE SECRET OF THE TORTILLA MADRID?

The potato omelette Manuel González Cordero, from the restaurant La Tortilla Madrid (Countess of Venadito, 26), is made with caramelized onion, well the recipe is Inspired by his mother who never liked finding raw onions.

For the contest they have presented the plate painted with an ali oli of saffron and crispy onion and his secret is “get a creamy tortilla, but not runny”.

"We look for that you don't see the egg and, above all, that they are very creamy tortillas. We have the pincho at 2.50 euros and the whole omelette to take home at 11.50 euros”, says Manuel.

SECOND AND THIRD PLACE

Simón Acevedo Reyes, from Black Label Tortillas, has achieved second place and his advice, in addition to making them with love, is "add a lot of onion very thin and very fried at low temperature with the potato and then with the free-range eggs from Madrid let it rest and soak well before curdling”.

In third position is Victoria Maseda Rodríguez, from Masseda Catering, which has presented "a piece of her native Galicia in Madrid" with an omelette without onion with a well-fried Galician-style potato, with more egg than potato.
