Shall we toast at Le XIX?
The rebujito has English origin, and in the 19th century, throughout Western Andalusia it was known as Sherry Cobbler . One of its variants contained carbonated water, sugar, lemon juice, sherry and crushed ice . For quite some time, it was the favorite drink of the English bourgeoisie and the Jerez and Huelva aristocracy. Around 1990, a chamomile brand relaunched the mix with the idea of making it popular among young people and thus increase sales. It immediately became the official drink of the April Fair in Seville. . Today each locality has its own recipe and if in Córdoba it is made with Pale Cream from Montilla-Moriles; in Jerez it is prepared with fine wine and in Sanlucar, with manzanilla. The popular version swaps sparkling water or Seven Up for soda, which gives it a sweet touch.
And since creativity has no limits, mint leaves are added , lemon slices, etc. The ideal proportion to make it refreshing is 1/3 manzanilla or fine wine to 2/3 soft drink. The origin of Agua de Sevilla is uncertain . It is not well known why it came about or why such an un-Andalusian combination bears the name of the capital of Seville. It is a kind of punch that combines pineapple juice, whiskey, cognac, cava and Cointreau , mix well and add whipped cream and cinnamon, in addition to crushed ice, stir until it forms a dense mixture and serve in a tall glass or a balloon.
