Guto Molina he started cooking when he was very little. He cooked in Brazil with his mother, who was Spanish, but they prepared dishes from all over the world. Later he was trained in business management, although he immediately recovered his passion for the kitchen and went through the Le Cordon Bleu school in London. There he became a professional and, back in Brazil, he began to be interested and experiment with healthy ingredients.

Beside Olalla Pineiro, Molina has now created in Madrid Cassava, a restaurant where he puts into practice everything he has learned about healthy kitchen and healthy lifestyle.

“Our concept is to make products with lots of flavor, low fat and using superfoods that provide benefits for your health and well-being”, warns a blackboard on the door of this place with an old wooden facade and glass in the middle of Chamberi neighborhood.

And if you ask the waiters about him or Guto when he leaves the kitchen, he will tell you again. In Mandioca there is room for vegans, vegetarians and carnivores. Plates gluten free and lactose free. Salads, wraps, toast. The only thing you won't find is red meat. But he promises you that you will not miss it in what has been open for just over three months, his star dish: the quinoa burger with mushrooms, cured cheese on top and potato bread with poppy seeds.

"We wanted to prove that you can eat more vegetables without missing red meat," he insists, after serving us one of the dishes that they have now introduced only at dinner (from Thursday to Saturday): balinese curry with marinated chicken, coconut sauce and fresh vegetables, accompanied by basmati rice.

The crepiocas, or crepes made with tapioca flour and stuffed with turkey, cheese or vegetables, they are also served only at dinner, accompanied by salad.
