Pizza lovers surely already had a heart marked on the name of Can Pizza. Until now, taste the delights of this artisanal italian pizzeria it could only be done in Catalonia and the Balearic Islands. But Can Pizza has just added a location: Madrid.

Those who collected last year the award for the best pizza freestyle of Spain in the edition of Madrid Fusion 2021 They have just opened a local in the middle of Calle Serrano. In his menu, how could it be otherwise, awaits the award-winning Jerry Tomato.

It is number 85 of the commercial street where Can Pizza has decided to start May opening its ninth pizzeria . He has done it among walls of graffiti, high tables, colorful chairs and a bar where a careful mass does not stop coming out.

KNEAD THAT KNEAD

Because, even if it was their 'Jerry Tomato' pizza, a delicacy where the tomato is king and is tasted dehydrated, candied and macerated, the mixture that captivated the jury at Madrid Fusión, the dough on which all their creations are served also had a lot to do with this award.

With 72 hours of slow fermentation, high-quality flours and 100% manual preparation, without tricks or rollers, the result is a crunchy delight that is played with a casual menu. In fact, the leitmotif of Can Pizza is none other than “ If you love dough, knead it”.

FROM ITALY THROUGH BARCELONA

When Isaac Aliaga, the brothers Max and Stefano Colombo and the pizza maker Lollo Lorenzo decided to open their first joint venture, they all had a very clear goal: to create an authentic pizza cult temple.

Thus, Can Pizza opened its doors in Barcelona in 2014 giving all the prominence to the traditional kneading process along with top quality products, just like any self-respecting Italian pizzeria does.

The formula has been clearly successful. Seven years later, those responsible for the firm have not stopped opening new premises in Barcelona (where they already have six) to later jump to Badalona and Ibiza. And now Can Pizza arrives in Madrid with the same motto: “ Respect the pizza”.

FOR ALL TASTES (AND MOMENTS)

Seriousness stays in the kitchen, yes. Because the gastronomic proposal of Can Pizza is daring, youthful and urban , as the very style of the place makes clear from the moment you cross the entrance.

Because his thing is rogue pizzas served in a place without complexes, full of color thanks to the Lo Siento design studio and walls painted by the young graffiti artist Yubia.

With a recipe book where options are not lacking vegan and vegetarian , the menu plays with classic creations but also dares with signature pizzas, salads, carpaccios (including one of porchetta) , and even a selection of "hot dishes" that whet the appetite (such as lasagna or chicken fingers).

But let's put our hands in the dough, never better said. The classics are not lacking, but the eyes should calmly read their interesting selection of red pizzas (without mozzarella) and white (without tomato) before being surprised by their signature pizza.

In the latter we have, for example, that of John Sparrowgo (mozzarella, asparagus, guanciale, scamorza cheese, pecorino cheese, dried tomato pesto, thyme, pepper and two eggs) or Al Capone (tomato, capers, burrata, red onion, Nduja, black olives, oregano, basil and basil oil).

Also Italian Job (tomato, burrata, arugula, serrano ham, cherry tomato, parmesan, basil, black pepper and oregano) will appeal to daring palates. And of course, leave room in your stomach for your award-winning jerry tomato (Oregano, basil, thyme, salt, pepper, burrata, cherry, red cherry, spring onion, marinated onion and garlic), declared “the best free-style pizza in Spain” at Madrid Fusión.
