So swear by his loyal fans. Carlos Bras-Lopes, Portuguese, he came up with his original recipe in 1987 and, due to its success, opened a small pastry shop with this “bolo” that, years later, some fans who moved to Madrid brought us. It has two versions: the traditional one with 53% cocoa and the black one, with 70%.
