Because, despite our differences ( his historical stinginess with Spain and a certain slowness to embrace change ) we must never forget that we are talking about the most prestigious gastronomic guide on the planet (the only one that matters, really) and also one of those marks that is infinitely bigger than a mark: it is a way of understanding the art of restoration that is already part of our lives. I can't imagine mine without Michelin.

That's why this year this is not the time for disagreements but to applaud an overwhelming certainty: la rouge has been around since 1923 (this is when the first volume of “Recommended hotels and restaurants” appeared), taking us by the hand to the best dining experiences in our memory ; always being an indestructible ally for the sector and a warm travel companion for the gastronomad.

For this reason, I insist, we can only applaud very loudly your decision to go ahead , his firm conviction (and that of each of his inspectors) of continue to be a bastion for the hotelier . And it is that perhaps there is no better way to demonstrate that there is light at the end of this unthinkable tunnel: with the illusion of its Stars.

Also, 21 establishments receive their first Star (19 in Spain and 2 in Portugal), 53 are added to the restaurants that have the bib gourmand award and the great novelty of the gala: 21 receive the new MICHELIN Green Star . Will the Green Star be able to find its place in the gastronomic imaginary of the lover of good food? In the words of the guide itself, the new recognition “ seeks to reward the effort of these establishments and echo the best gastronomic practices in the field of sustainability .
