The Chief Traveling Food

Organic veal steak from Ávila.

To be happy I want a truck... and a steak. This beautiful vital refrain would serve to define the philosophy of The Chief Traveling Food, Chamberí's new restaurant who welcomes you with a shiny old truck.

It is more than a decorative element, it is the head of your bar and the heart of your gastronomic concept: “We travel to cook. We cook for you to travel”. With this blue food truck, an international and national food journey begins. "It's a round trip" He says Alberto Dompablo, one of the two partner brothers at the wheel of the place.

I to be happy, I want a truck.

The tour starts at your bar area, with high tables, intended for cañeo and copeo (it has uninterrupted hours from 12 to 1), those that almost always end in a snack. Past the cab of the truck, behind is the kitchen well in sight. “ Not only for a question of transparency”, clarifies Dompablo. "We also like that the cooks are connected to what is happening on the other side, in the room."

Past the truck, you enter the room, with large windows to the outside, a space dominated by wood with large plants. Light and space, with terraces that give it a lot of versatility, but "also privacy", says Alberto.

The journey of the letter, moreover, is divided into three stages. The first is what they call properly Travel Food. It's international cuisine. a stop by countries that will change every three months, also looking for a little wink with the season.

have started with Mexico, that cold goes very well with spicy, and they always have five dishes: cochinita pibil, enchiladas (veal meat with mix of cheeses and chili), Kahlo heel (braised shank meat in its juice with sour cream and pico de gallo) , quesadilla and guacamole.

"Surely in the spring let's go to the USA and in summer perhaps something more Mediterranean, cooler”, advances Dompablo. But there will always be five options of typical dishes from that place where he stops the food truck and gives the recipe a spin or uses local produce.

Spacious and bright living room.

The second stage of the adventure continues around this blue truck: it is street food, street food, five other snacks also inspired by international cuisine and well traveled: like the roller (wheat cake stuffed with Iberian secret, roasted peppers, chili sauce, caesar and gouda) , Cuban sandwich; work (vegetables with duroc pork needle and gluten-free option) ; the hot dog truck (with smoked sausage that they prepare in the kitchen with beef from Ávila) and pulled pork (roasted pork neck with fried egg, barbecue sauce and honey, very juicy).

The final stage is not the end of the journey either, it is almost the beginning. Where we always return, to the recognizable dishes that we miss when we leave home: the ‘La Jefa’ potato omelette, the tiger croquettes, the tripe, the pan-fried clams…

And, of course, the main course, "It's not the star dish, it's THE PLATE", Albert says: the organic veal steak from Ávila from the Dehesa de La Serna brand, that this man from Avila with 15 years of hotel experience proudly brings from a butcher shop in his city to Madrid. Cuts from 1.3 kilos to more than two, They take up to 25 minutes to make it, because they give it the right point, exactly, that is requested and that deserves such a majestic piece.

There is also entrecôte made from the same organic veal and suckling pig, also from Ávila, confit at low temperature. And two fish options: red tuna belly and marinated salmon.

And as the icing on the trip: the dessert, to highlight the brioche French toast, the dessert that already triumphed at El Jefe Traveling Food in Ávila, where they started rolling for a year to now reach Madrid at full throttle.
