Open almost 30 years ago, China Crown was one of the first restaurants to introduce Chinese cuisine in Madrid. Some time later, when it was almost celebrating its 20th anniversary, it completely reinvented itself to introduce an imperial cuisine and dishes such as dim sum, that until then hardly were seen around here, where we were still tied to the spring rolls and the rice three delights.

Now, after a temporary closure, in the same place it is reborn Shanghai Mom, a new concept that follows the street food trends of one of the most populous and lively cities not only in China, but in the whole world.

No trace of the old China Crown.

Inspired by the movement of its streets, in its tireless rhythm, the decor it is much more casual than in the old China Crown, with details that refer to those streets, such as the bicycle that hangs from its walls. But, of course, it is in the letter where that street inspiration really comes through. A fairly extensive new menu behind which the owner of the old restaurant is still, Maria Li Bao, this time as a consultant from Shanghai where she now lives.

Among the novelties of the new proposal, a greater dim sum offer, that are made by hand every day in the Shanghai Mama kitchen, a fundamental difference to recognize quality steamed dumplings. Among the seven varieties (plus grilled gyozas) that they have, they already recognize a star: the xialongbao stuffed with meat and black truffle.

One of the strong points of Shanghai Mama is that in its kitchen visible to the main hall it is made up of a team of Chinese chefs with whom the menu gains in authenticity. It shows in the starters, from crispy aubergines with Iberian pork to spicy soups.

Their rice dishes are large bowls, which serve as a side dish or main course, and are full of flavor. As the Crispy Ku Bak with chicken, shellfish and pinto pita egg; or the rice accompanied by secret, veal.

And among the main dishes they also have a star… It bears the name of the restaurant for a reason: Shanghai Mama Duck crunchy in almond sauce.
