In first place, La Casona del Judío
Once again, TheFork -the leading reservation platform in Europe- has revealed the TOP 100 Spanish restaurants, presented by American Express. Topping the list for 2020, a year in which we have had to learn to adapt to changes , has, if possible, even more merit.
The gastronomic sector has put his creativity on the table, as well as juggling so that its savoir faire continues to conquer the palates of diners, without losing an ounce of quality, of course.
Restaurant La Casona del Judío, in Santander
A clear example of this is the Cantabrian restaurant of the Catalan chef Sergio Bastard, La Casona del Judío , which has positioned itself at the top of the ranking. The Gazebo of Amós, by Jesús Sánchez , also Cantabrian, and The Echaurren Portal, by Francis Paniego , located in La Rioja, complete the podium.
The choice has been made based on the opinions of thousands of users who book each day with TheFork app.
To prepare the list, TheFork has taken into account different criteria, such as the notes obtained by the restaurants during this 2020 , the volume of opinions during this year, visits to the restaurant file and the reserves generated.
“With this ranking we want to highlight and reward diners' favorite restaurants , because, after all, they are the biggest jury in the world”, he affirms Abraham Martin, Marketing Director of TheFork Spain.
The result does not surprise us, as we were already saying in 2018 , the old Indian house from the 19th century -located a few kilometers from the center of Santander- offers one of the most interesting kitchens in the North of the country.
recognized with the “MICHELIN Plate: quality cuisine” distinction, the restaurant combines tradition and avant-garde to perfection.
La Casona del Judío: avant-garde and tradition
"What we like the most, transmitting new emotions, sensations... All through our work." Said and done, but there is no better way to check it than by tasting its menu, conceived under the philosophy of the seasonal product.
From his ortiguillas rice, lime and glacial phycoid , sole confit with meunière and sea spinach; going by the grilled blue duck, accompanied by its own tartar and organic couscous. There is no dish on the menu that gives room for indifference.
“For us it is a real pride to head the list of the TOP 100 of TheFork. A recognition that comes from those to whom we dedicate our day to day: the diners. And precisely in this 2020 so hard for everyone. Definitely, It is an honor that highlights the work that we do from La Casona del Judío and all the Cantabrian restoration” , commented Serge Bastard.
As for regions, the Madrid's community can boast of having the highest representation in the TOP100, with 18 restaurants , 13 of them located inside the capital. Horcher (nº12) and Etxeko Madrid by Martín Berasategui (nº22) rise among the top positions in the region.
For its part, Catalonia manages to add up to 15 restaurants , while the Valencian Community registers a total of 11.
As to the restaurants that remain in the TOP 10 , apart from the Cenador de Amós -which has not released the silver medal-, they also deserve to be mentioned El Bohío (nº4), led by Pepe Rodríguez, winner of the last edition of the Top100 of TheFork, and Martin Berasategui (#6), which topped the list in 2018.
Baumkuchen, Horcher (Madrid)
Secondly, Roots (#10) , recently awarded s u first Michelin star and run by the chef Carlos Maldonado, has also remained on the list.
