Regional cuisine by Manuel of the Bear , perhaps one of the chefs who have given the most fame to the cuisine of La Mancha.

Manuel has put his family's longtime restaurant on the map of must-visit places in Castilla. And he has done it by taking advantage of the local raw material and sublimating the flavours. In the **single menu (40€) **, of course, they could not miss the purple garlic (in soup it is a delight) or birds like the pigeon or partridge.
