Madrid lives A revolution in the world of the masses. The Miragoli brothers at Cientotreintaº, Fede and Sasha at Acid Bakehouse, Estela Gutiérrez at Estela Hojaldre, Timi and Joaquín at Alma Nomad Bakery... More and better breads and sweets are eaten every day in the capital.

Y we are in luck, because just a step from the Puerta de Toledo, In the Acacias neighbourhood, and specifically at Calle Gasómetro, 11, a new workshop has opened its doors, Clan Obrador Artesano. And it's not just any one, but Nuño García's first.

But, who is Nuño García? We are facing one of the great figures of our country's pastry. Nuno wears more than 20 years in the trade, long career that has led him to go through Michelin stars as Miramar by Paco Perez either two skies together with the Torres brothers, to later work for a time abroad, as executive pastry chef at the Marina Bay Sands of Singapore and later on balinese Y Koh Samui.

after their journeys through Southeast Asia, the pastry chef returned to Spain, where he has spent almost five years advising other colleagues by profession and working as a teacher. We owe him geniuses like the panettone that triumphed this past Christmas, that united him with the Miragoli brothers of one hundred and thirty Without neglecting all these experiences and advice, Nuño decided that it was time to have something own.

“I have passed a long time in pastry, I have been abroad a lot, I have been an advisor to others… I have seen that now was the time to open something of mine”, he confesses to Condé Nast Traveler. So he put the focus on the neighborhood of Acacias, a place that he considered perfect to develop this personal project. Clan Obrador it moves away in this concept of everything he had done so far. “This is very different, I have always made haute pastry and here we wanted to go back to basics, to the breads and pastries of a lifetime, which in Madrid they like especially,” he recounts.

And why Clan? “My brother, my cousin and Isidora have gotten together. We are family and friends from a long time ago, we are a clan”, Nuño tells us. Everything stays in the family and each one contributes something to the project. His cousin sells him at the store, Isidora Sánchez, his right hand, in the workshop and Gonzalo, Nuño's brother, who is another of the essential legs of this project, is in charge of the design and tax issues.

Your calling of him? Reach everyone. “The idea was to have a small store, where the product is the star and a workshop big enough to be able to produce,” he explains. And that's what you find when you get to Clan. A counter full of delicacies where what matters is the product, with a esthetic simple, which is kept in the workshop that almost triples in store size.

There is no trap or cardboard here. Because behind those doors that are often open, you can see how they make each and every one of the pieces that they sell later. That is a fantasy. Of breads in preparation, of Ramalhos Portuguese ovens, of which he is an ambassador, of the rolling mill what makes the magic... “We want to bet on transparency, so that everyone can see that we are here working and producing Garcia emphasizes.

what is bought then in Clan? A variety of puff pastries and breads that are impossible to resist. Let's start with the bread. The offer is varied and extensive. “We make everything with sourdough. They stay all night resting in a chamber and we bake the next day”, explains Nuño.

So you can choose between the Clan loaf, made with whole wheat to the stone and rye wholemeal, sliced bread, a rustic loaf for just 1.30 euros, ciabatta, wholemeal loaf and wonders like the brioche féuilletee (puff pastry). “We also do some more traditional ones like the white bread, I personally like it a lot and wanted to recover it little by little”, he points out. They incorporate into this salty offer focaccia, such as the one with gorgonzola and onion and another made with rosemary, olive and garlic.

The rest is a firm commitment to the puff pastry, They practically sell out every day. "We keep trying to choose what our star product is, the puff pastries fly, everything that has chocolate ...”, laughs Nuño. Croissants with a thousand layers, both straight and with horns and even filled with gianduja, cream or chocolate Neapolitans, palm trees with and without chocolate, cinnamon rolls...

They are not missing either croissant doughs in XL cupcake format with different fillings (Tiramisu, vanilla cream, salted caramel, etc) or croffin, a hybrid between croissant and muffin filled with hazelnuts or strawberries.

Sweeter? Very interesting is also your classic apple pie or the brownie, which is cooked al dente so that the interior is creamy, not to mention another of the products that clamorously attracts attention in its display case, Belem cakes, they are being a success. It is a product that Nuño learned in Portugal and elaborate with Corman Butter, which he also represents. One of the best we've tried in Madrid? We say yes without a doubt.

As if that were not enough, all this is not the only thing, because being a Clan also a laboratory of ideas, new ones are coming out every day creations and soon they will also make coffee to bring allies with Nomad.

Ultimately, Clan is committed to giving a twist on the classic or as Nuño says, “apply what I know to my whole life.” And best of all, they have taken into account that many of these products They are not day to day so they have opted for very tight prices. We wish you a bright future.
