Gluten free and crazy
In Spain there are some 500 thousand celiacs . In other words, 1% of the total population is intolerant to gluten, the protein found in wheat, barley, rye and oats, according to what was recently reported by the Federation of Celiac Associations of Spain . Although celiac patients increase by 15% each year, they still have difficulty finding food and, above all, quality food at a reasonable price. is what they discovered Fermín Sanz and his wife when his nephew was diagnosed. They didn't know where to find good bread, good buns, good cakes and although they had never had any relationship with the hotel industry, they decided to set up ** Sana Locura ,** a bakery and pastry shop that adapts traditional recipes with ingredients suitable for celiac patients.
A Mediterranean and gluten-free breakfast
Experienced bakers who have researched and still do in ingredients and recipes who manage to create classic cakes and pastries that are appealing to everyone, but without gluten . A simple look at their display case shows that they have succeeded: chocolate palm trees, loaf bread, tea cakes, cakes... In addition, 95% of their products do not contain lactose either.

WHY GO?
Three words: Chocolate palm. In two sizes: large to eat one, or small to surreptitiously devour several while hanging out at their individual or communal tables. It is also worth it for its cheap savory menus with empanadas, salads or pizza.
