Acid Bakehouse just received the award Best bread in Madrid 2021 , in the fourth edition of this annual contest created and organized by the Matador Club.

The rest of the jury has been made up of five professionals from the world of gastronomy of the stature of: Telmo Rodriguez (winemaker and vice president of Club Matador), Estela Gutierrez (by Estela Puff pastry), Clara P. Villalon (food journalist), John Manuel Bellver (Director of Lavinia and gastronomic critic) and the winner of the last edition, the bakery One Hundred and Thirty Degrees (run by the Miragoli brothers, of whom Alberto has been present as a jury).

ACID has competed with five other finalists: Levain Artisan Tahona, Bread tide, San Francisco Workshop, Bakery Y PANEM Madrid.

THE BEST BREAD IN MADRID

Acid Bakehouse is the second branch of this brand specialized in bakery and pastry that has Paula Senior as head baker. Acid Café opened its doors in 2017 and just a year ago it opened Acid Bakehosue, a workshop dedicated to artisan breads and pastries.

For Faith Gratian , owner of Acid Bakehouse with Sasha Zavgorodniaia , this award is "an honor because it is important that small bakeries like ours are valued".

The president of the jury, Jose Carlos Capell , has highlighted the winning piece that "it is an elastic, honeycombed bread, with a golden and crunchy crust, a very controlled acidity, very soft, and an intense flavor of cereals that in the end reminds me a little of beer".

In addition to the certification accrediting it as the winner of the IV edition of the 'Best Bread in Madrid' award, ACID has become a guest member and official supplier of Club Matador for one year.

THE CONTEST

'The best bread in Madrid' is an initiative inspired by the contest that has been organized in Paris for 25 years to choose the best baguette of the city, in which the winner becomes supplier of the Elysee Palace for a year.

Who can apply for the prize of the Madrid contest? All Madrid professional bread artisans who have their own workshop.

Entrants must submit to the contest two one kilo loaves the same made only with wheat flour, yeast, water and salt and, among all the proposals presented, a selection of six loaves that go to the final.
