Propaganda 12 or when Italian wine and dishes monopolize everything
That is, what would happen if we chose first the wine and then the food ? propaganda 12 , the new location of Chueca that everyone talks about, part of this concept.
With the idea of publicizing – hence the name – the wines they distribute, Mattia Pierantoni and his two partners have devised a Italian tapas menu and other delicacies (champagne Sunday brunch included) that revolves around wine . 365 wines, to be precise ; if we wanted, we could visit this place every day of the year and not repeat wine a single day.
The interior of Propaganda 12
On the wine list are represented sparkling, champagne, white, rosé, red, sweet and generous , from France, Spain, Germany, Portugal, New Zealand, the United States, Chile and even Morocco.
Special mention deserve the italian wines , through which we can get to know the varied Italian geography, with its diverse climate. And so, we can taste from a Tasca d'Almerita Malvasia Capofaro 2016 (Sicilian sweet wine) up to Prosecco Extra Dry Millesimato 2016, Col Dei Salici (a sparkling Venetian), passing through a Villa Antinori Chianti Classico Riserva 2013, Antinori (a Tuscan red) or a Terre Alte 2013, Livio Felluga (a Friulian white) .
The Propaganda 12 Cheese Board
One of the commandments propaganda 12 it is to experience. Here we must leave behind the clichés that we have been hearing for too long. That white wine pairs better with fish or that red wine enhances the flavor of meat dishes, for example.
According to Mattia, it is our palate who rules in matters of pairings and since we have different palates, we cannot stick to such strict rules.
Pairing upside down or the world right side up
What do they offer us to pair with their extensive wine list? To start, some great Italian tapas, served with artisan bread panod .
Among them, we highlight the Bologna Mortadella with Truffle, Zibello Culatello Ham from the province of Parma , the table of assorted sausages, the Bresaola della Valtellina (Italian Cecina) served with Parmesan cheese and arugula, the Porchetta di Ariccia (Suckling pig roasted with fine herbs in a wood oven), the Candied artichokes with Parmesan cheese flakes , the Burrata di Andria with arugula salad, tomatoes confit and grilled green asparagus wave international cheese board (Stilton, Cabezuela, Briscola and Camembert, served with fig jam, quince and fruit) .
Don't miss the cakes at brunch
To continue, they offer us various main dishes, among which we find the Tuna tartare (bluefin tuna from sustainable fishing with black garlic mayonnaise), the Mexican style ceviche (wild sea bass, corn toast and Chipotle chili mayo), the steak tartare (knife-cut sirloin with quail egg), the pasta of the day, a different fresh pasta, or the Gorgonzola in Champagne served with toast , which is made every week with a different Champagne.
And finally, we can choose between the caprese cake (chocolate and almond cake) , the classic tiramisu wave cheesecake with raspberry coulis.
To the rich Italian breakfast
WHY GO
Because you can drink different types of champagne by the glass and also, whatever wine you like, you can buy it right away and take it home with you.
ADDITIONAL FEATURES
Every month, Mattia and his team choose 15 new wine references that will enrich the already extensive menu. Before selecting them, they visit the wineries where they are made and meet the producer, because for Mattia and his two partners, wine should not and cannot be just a bottle, it is above all, something with a story behind it. For this they also usually organize different tastings to see the new additions.
