LACREME MADRID: A PROJECT THAT EMERGED DURING THE PANDEMIC

It was during the lockdown last april when Mónica García started -almost unintentionally and purely by chance- with this hobby that over the months has blossomed into a great work project that does not stop growing.

With a degree in Business Administration and Management, to later specialize in Advertising and Communication, Mónica's career in the world of hospitality began years ago when she decided to set up a restaurant in the center of Madrid (called Cream of the Cream ) where she made fusion cuisine with a very elaborate presentation of the dishes.

When the time came -and after six years at the helm- she decided to transfer it and began working in a large hospitality group in Madrid as director of operations. After this last professional stage, at the beginning of 2020 she decided embark on her own personal project related to consulting and specialized advice in hospitality . Needless to say, her fate had other plans for her.

“In March the coronavirus and the pandemic came into our lives, they locked us up at home and during that time the magic happened. I am a person who loves to cook, especially pastries . I was always taking courses, I am very self-taught and in my house since I was little, the subject of sweets has been given a lot of importance with my mother and grandmother, ”she tells Traveler.es Mónica García, creator of Lacreme Madrid.

"That's when the lockdown came and I got hands to work to make cakes and I was uploading them to Instagram . People began to share them and my friends suggested that I start making them a little more professionally. My friends began to order me orders and then unknown people contacted me. The reason? In Madrid this type of cakes could not be found as easily as in other types of cities such as Paris ”, she continues.

And the chosen name? It could not be other than this. It was selected by recycling the one from her previous restaurant, but this time leaving only Lacreme, a play on words between Spanish and French, which perfectly represents the ideal of cakes and tarts that you want to convey as a brand.

IT'S NOT A CAKE: IT'S A 'SOPHISTICAKE'

From the first glance, we know that we are not looking at a cake to use. And for this reason they cannot be called as such. Monica decided to call them sophisticakes , by sophistication and quality that they give off , in addition to the type of clientele they are aimed at: people with a weakness for good taste.

It is a completely manual process . I use my pastry machines but all I do is in an artisanal way . Although it may seem so, I do not only offer French pastries, there are also recipes for American, Spanish, Italian and even Japanese pastries to…”, comments Mónica García.

This is how in the Lacreme Madrid menu we can find true delicacies, each one more appetizing than the previous one: cream and strawberry cake, coconut and violet cake, lemon pie, cheesecake, traditional grandma's cake, crème brûlée, poppy cake, tiramisu and many other proposals made with great delicacy and great artistic beauty.

The crown jewels? In Monica's own words: “ One of the most successful cakes are the cakes we ate on children's birthdays, which is grandma's cake . This time it's not haute pastry, but I I try to make a difference and give them that special touch . And others that also demand a lot is the sophisticake of cream and strawberries with a presentation Marie Antoinette in white and pink flowers and also the Pavlova with a baked meringue exterior or, stuffed with lime and whipped cream, ending with a strawberry and raspberry topping”.

The best? They are just as delicious as they look! “Since I started this there has not been a single customer who has complained about my service. I always try that everything is of quality, with organic products . The best proof I have that they are liking this is that customers are repeating it”, says the creator of Lacreme Madrid.

FLOWERS, FLOWERS AND MORE FLOWERS

Flowers are one of the elements that most characterize Lacreme Madrid cakes and -of course- one of the most repeated questions is whether they are can ingest O well they are mere decorative elements . The answer? Both are correct!

“The flowers that I am using right now They are natural flowers, that is, flowers suitable for human consumption. . They are treated, washed and can be eaten perfectly like violets, carnations or roses . I do not decorate with flowers that cannot be eaten. Personally, what I do is remove them, but I always recommend that everyone does what they consider appropriate after taking the respective photos of rigor and being aware that the flowers are neither toxic nor poisonous ”, indicates Monica Garcia.

In addition, flowers make Lacreme Madrid almost unintentionally the perfect gift for any special occasion. What is better than a proposal that combines this element of nature with a cake? “ The truth is that it is a very nice and exciting gift . I would love to receive it and it is also different, that it deviates from what we are used to giving away, ”she continues.

If 2020 has been a good year for Lacreme Madrid, 2021 promises to be something wonderful. At the moment it's time to grow a workshop on Pelayo street in the Chueca neighborhood . “My idea is to start with the bakery and make it a collection point for people to come for their cakes. It will not be a bakery, but a place where people can pick up their orders on request ”, comments Monica.

But the thing does not end there. In the medium term -around February or March 2021- in the same location of the workshop, the idea is to take advantage of the space to do workshops or gastronomic experiences with friends, family or brands what do you want to do small events as brunch or snack in the best company.

"In the long term, I consider many things. I am passionate about tableware, of which I have a large collection that I have been collecting over the years. I consider that the workshop is also a point of sale for selected pieces with much taste and detail that I put on display. It is also in mind a recipe book , a lot of things that I have in my head and that I hope will gradually come true in the future".
