Brunells the Best Artisan Butter Croissant in Spain

Brunells: the Best Artisan Butter Croissant in Spain

Every year, the Barcelona Pastry Guild makes us happy with a very sweet competition: the best homemade butter croissant in Spain . A way to put on the map those pastry shops and bakeries that take care of their creations with the best ingredients, spend time with care and delicacy and bake that buttery dough non-stop making us salivate every time we pass in front of the shop windows and reach the aroma of the croissant...

In this thirteenth edition things have changed (like everything in this ' new normal ') and the tasting and the prizes have been awarded in a small ceremony at the Pastry School of the Guild of Barcelona in which, once again, the best artisan butter croissant in Spain stays in Barcelona . If last year Toni Vera triumphed with his croissant creation 'brioche style' from the Pastisseria Canal (an award that he also received in 2016), this year the highest award went to Andreu Sayó, from the historic Brunells pastry shop.

THE HISTORICAL PASTRY SHOP THAT CLOSED... AND RISE FROM ITS ASHES

The story of Brunell's It is the history of Barcelona. Is pastisseria was born in 1852 and quickly became a essential of the sweet whims of the people of Barcelona . After some ups and downs, it closed in 2018, leaving Calle Princesa a bit orphaned. Until this year, perhaps the bravest year to revive this pastry emblem of the Gothic quarter.

Joan Guasch , CEO of brand-building agency LKC, is one of the three partners who went on the adventure. Accompanied by savior sans (owner of Cafes The Magnificent and the teahouse Sans & Sans ) Y Luis Estrada , from pastry shop Canal, saw in the closure of Brunells a sign of everything they did not like about their city: "we saw a way of rebellion, to show what happens in cities like Barcelona that are slowly losing their identity , with the city centers so similar, full of the same business chains...", comments Joan.

That is why already in June 2019 they decided to bet on the brunells reopening , an adventure in which they got fully involved with the approval of the family of heirs to the pastry shop, local owners : "They were in tune with our idea; for us, Barcelona is a sum of our own brands that make up a larger brand, the Barcelona global brand... and we wanted Brunells to continue being part of this Barcelona".

As has happened with all businesses in this country, the coronavirus is here to stay and caught the project by surprise, which, however, did not remain in limbo: "What came in winter was not expected by anyone, it has devastated the center, with visitors... but in June 2020 we opened and we have found a tremendous welcome from the residents of the neighborhood , in a place where we thought it wouldn't have as much community life as it was so focused on the outside world".

Now, with the good news of the prize for the best artisan croissant in Spain and the prize of 1,000 euros under his arm, the workshop will continue to work and serving their creations to the residents of the Gothic quarter of Barcelona, keeping alive a pastry icon of the city . And yes, with the most delicious croissant in the city and in Spain in its shop window.
