FROM LEBANON TO IBIZA PASSING THROUGH PARIS AND LONDON

Noura, the culinary adventure that Nader and Jocelyne Bou Antoun began three decades ago in Lebanon, has been spreading to multiple locations such as Paris, Cannes, Monte Carlo and what they call “their three gems”: Hobart Place in Belgravia, Curzon Street in Mayfair and a delicatessen in Knightsbridge.

They now share the baton with two of their sons Majed and Hani and continue living each day of work "as if it were the first" they affirm.

'Noura' is a word of Arabic origin that means 'light'. And when you arrive you will understand: natural light enters Noura everywhere, as it is located a few meters from the beach and **has a terrace and interior room open to the sea, the gardens and the hotel's main pool. **

In Noura, the light of the sun gives way to that of the moon, offering us a double spectacle: the sunset and the Lebanese feast that you are about to taste.

In addition to offering the best of Lebanese gastronomy, Noura has managed to materialize a true revolution in healthy gastronomy thanks to the fact that Its raw material is the excellent Ibizan organic product.

A good way to start the Noura experience is sharing dishes, where we find attractive options such as Rikakat cheese, speeha pizza (a Lebanese pastry made with seasoned minced lamb, tomato, onion and pine nuts) and the classic falafel.

It is more than recommended the kebbe, one of the stars of Lebanese cuisine (some tasty marinated beef meatballs) and fatayer green (a kind of dumplings stuffed with lemon spinach and pine nuts).

HEALTHY, RICH AND LEBANESE!

In the raw pleasures section, in addition to sashimis and carpaccios, they offer two tartars. The most conservative will be right with the one with tuna and avocado, which is prepared here with ginger, coriander and Ponzu vinaigrette.

However, the most daring cannot fail to try the spicy lamb tartare and fresh mint: an explosion of flavors that leaves no one indifferent.

The healthy and delicious Mediterranean diet that we were talking about is championed by salads like green (with spinach, avocado, cucumber and parmesan), Caesar with prawns, avocado and king crab or Greek (with feta cheese, tomato, olives, arugula, cucumber and green beans).

Our favorite healthy option? Tabbouleh cooked in the classic way, with fresh parsley, tomato, bulgur, olive oil and lemon.

TO THE RICH MEZZE!

They could not miss in a Lebanese haute cuisine restaurant: the Mezze, a selection of small traditional appetizers perfect for sharing that Noura presents with the occasional surprise.

For example, you can choose the classic hummus based on chickpea puree, sesame paste, lemon and olive oil or let your palate discover the interesting truffle hummus.

Other mezze that are worth trying are the Moutabal (a grilled aubergine purée, sesame cream, pomegranate, lemon and olive oil), the Samake Harra (a vegetable stew whose condiments will make you rethink if your favorite is still your mother's) or the delicious Labneh (a traditional Lebanese cheese with fried artichoke and lime zest).

Let's finish with a bang: savoring the best and freshest seafood products, such as the sea bass with Chalaka sauce and pomegranate, the prawns flambéed with arak or the roasted cod with vegetable ratatouille and pil pil sauce.

And from the sea we jump onto a grill from which delicious meats such as lamb chops with wild thyme, Chicken Taouk or Shawarma, a typical Middle Eastern dish that is prepared by cutting thin slices of lamb or chicken meat (in short, similar to the mythical kebab so famous in the street food universe but that in Noura also acquires a pool food touch if you take it with your feet soaking).

If at this point you have discovered (or rediscovered) Lebanese cuisine and loved it, it is impossible to resist finish off the experience with one or several desserts (remember, the concept of “sharing” rules here).

Suggestions? Many (hence asking for several): the red fruit Mouhalabieh, the Knefeh cheese cake or the 'Masion Noura' baklava. A sweet and pleasant ending.
