Escaping in search of the fresh air has become one of the favorite activities of the inhabitants of the capital: a walk among almond trees in bloom, a route to a magical waterfall, visit charming towns such as Buitrago del Lozoya, Patones or Rascafría, stay in rural hotels or even sleep in the trees of the Sierra Norte.

If, in addition to being a nature lover, you are also a lover of good food, we have a perfect plan for you: Cabaña Marconi reopens its gastronomic garden, surrounded by centennial oaks.

Located at the gates of Madrid, Marcos Olazabal Janson's restaurant returns with new proposals to celebrate spring (and begin to glimpse the summer) in a romantic, suggestive and, of course, safe outdoor setting.

AN OASIS SURROUNDED BY CENTENARY OAKS

Cabaña Marconi, the Swedish restaurant in Encinar de los Reyes, has taken advantage of the beautiful and extensive garden space that surrounds one of the most famous winter terraces in the capital to create an environment where enjoy gastronomy with bites from around the world.

Although it is located in Alcobendas, Marconi Cabin is a tribute to the sea and its treasures, rising as a hybrid between a Nordic refuge with views of the Baltic and a surfer's cabin in the north of France.

To the original culinary proposal is added its exquisite interior design, by Sofía Olazabal's studio, sister of the chef and creator of the restaurant, Mascos Olazabal.

Both the menu and the decoration reflect the roots of the Olazabal brothers, with a Swedish mother and a Mexican father of Basque origin, offering a multicultural experience with a Swedish flavor but where the Spanish product is very present.

Euskadi tablecloths, bookstores, fireplaces, surfboards and glass ceilings they make this place a unique oasis that for a moment makes us feel in the middle of a Scandinavian forest.

A Nordic refuge but with all the heat of the Mediterranean

A MENU WITH A NORDIC FLAVOR AND A MEDITERRANEAN HEART

Olazabal's gastronomic proposal includes recipes such as** marinated herring, Swedish caviar from Kalix, salmon marinated in dill sauce, anchovies from Santoña and mussels in cream.**

In this delicious cocktail of world morsels, the gastronomic influences of France, Sweden, Spain and Italy are perfectly combined in a menu with an international vocation.

So we can enjoy French cheese presented on a board or fondue or opt for the country of the boot with a fresh burrata with truffles, a focaccia, a bolognese, a milanesa or some ravioli with pesto.

BY LAND, SEA AND AIR

Lovers of the garden and organic products will find in Cabaña Marconi multitude of dishes made with seasonal products and high quality ingredients.

From the always successful gazpacho to fried artichokes, passing through appetizing salads, green has a fundamental role in the menu, but let's not stop here.

As we already told you, the sea is the main protagonist of this cozy garden that offers an unprecedented feast: French Sorlut oysters, Alaskan crab leg, French cream wing mussels, anchovies from Santoña, Swedish herring and the traditional Stockholm market prawn toast (toast skagen) are some of the delicacies of the ocean that they propose.

And for the most carnivorous, a culinary journey that makes our mouths water: from the Aran Valley sausage to Mexican tacos, passing through the chateaubriand with Béarnaise sauce, the sirloin stroganoff and the Swedish meatballs. To lick your fingers!

SALMON IS KING

The king of the menu is undoubtedly the salmon, present in several versions, of which we must highlight the popular salmon in dill sauce.

You can also order it steamed (accompanied by Scandinavian sauce), grilled (with alioli) or try the new salmon steak tartare with potatoes.

In addition, Marcos Olazabal Janson is committed to recovering traditional dishes, both national and international, and delighting our palates with a comfort food cuisine thanks to which, rediscover, for example, hooded eggs.

A journey through Scandinavian flavours, with national stops and without leaving this garden in Madrid which finally reopens its doors. Let's go?
