“One of our favorite recipes these days is the classic Yogurt cake which we have slightly adapted and to which we added fruit, sugar and nuts above to give it a little more grace. If you don't have rye flour you can use wheat flour and it comes out good too. If you don't have a pippin apple, use the apples you have at home these days”.

INGREDIENTS FOR THE YOGURT CAKE WITH APPLES, HONEY AND WALNUTS

1 yogurt natural

In the same cup of yogurt, olive oil (110gr)

In the same glass of yogurt, Brown sugar (+ 30gr to sprinkle on top) 120gr

1 tablespoon of honey

1/4 teaspoon **salt**

3 eggs

Two cups of yogurt rye flour 140gr

A cup of yogurt wheat flour 70

a tablespoon of baking powder

Two apples pippin

A bunch of walnuts

WE START COOKING

1.Preheat the oven to 180ºC.

2.In a bowl mix the yogurt, olive oil, eggs, brown sugar, salt and honey and beat it all well.

3.In another bowl mix the flour with the yeast and the species if you are using any.

4.Mix the contents of the two bowls until the flour is just incorporated into the dough. It is important not to beat the cake batters too much when mixing the flour and yeast with the rest of the ingredients to get a light texture.

5. Peel and cut the apples into thin slices . Arrange them in groups in a fan shape, alternating the direction of the fan and placing the slices at a slight angle. Place the nuts in the pieces of dough that remain between the apple fans or even on top of a slice of apple, sprinkle brown sugar remaining on top and bake the cake for one hour, until the apples are golden brown and the knife you insert into the center of the cake come out clean.
