Under the title 'Journey of Flavours', award-winning Israeli chef Haim Cohen (judge on the Israeli version of MasterChef for eight years and one of the most respected chefs on the Tel Aviv culinary scene) proposes us an evocative seaside experience in which all the senses come into play.

At Chiringuito Blue, proximity products are prioritized, offering pure flavors that change with the season: "We allow nature to decide what we eat, celebrating the seasons with menus that adapt to them," they say.

To begin this journey of flavours, nothing better than doing it with tapas and dishes to share, such as warm Pedrosillano chickpeas with tahini, grated tomato and turmeric; sea ​​bass sashimi, tomato seeds and coriander; or the Ibizan prawn carpaccio.

They are just as recommended its popular creamy Joselito ham croquettes, the clams with white wine and green sauce or the battered crab with green sauce and homemade zhug mayonnaise.

Do you want something more exotic? Then go straight for the shakshuka –a Middle Eastern dish made with eggs cooked in a tomato sauce stew served with pita bread and tahini– the yellowtail shawarma , served with roasted peppers and lentils; either grilled lamb arais with fresh herbs.

In addition to the fish of the day (which never fails), the Chiringuito Blue menu includes seafood delicacies such as charcoal-grilled sea bream with Ibizan lemon and confit garlic; Turbot fillet in herb crust with leeks and spinach; grilled sole or octopus.

The culinary stop in the country of the boot proposes pastas such as the linguine with garlic, chilli and olive oil and the mezzi paccheri pasta with squid and cherry tomato (both also available gluten-free).

The meats are another guaranteed success, from country-style charcoal-grilled chicken to the Blue Burger (100% Galician beef) going through the Galician blonde beef entrecote.

We will start by ordering one (or several) of the house desserts. Our favorite, without a doubt, is the original ice cream sandwich, made with vegan chocolate ice cream and covered crumble, crunchy kikos and wafer biscuit (does not contain lactose and can be ordered without gluten).

Other ideal options for sharing are the piña colada tartlet, the cheesecake mousse, the apple crumble or the classic and refreshing plate of fresh seasonal fruit.

In addition to the careful selection of wines (Ibicencan, national and international), at Chiringuito Blue you can enjoy classic and signature cocktails such as the Mojito Blue, the Cool Skull or the Expresso Martini.

Lunch and dinner are served à la carte from 12 in the morning and they have valet parking from May to September, so all you have to worry about is taking a seat and enjoying the food and the views.

Together with Ibiza Preservation Foundation (IPF), Chiringuito Blue has launched the '1 euro per table for the environment' initiative in which 1 euro from each table is donated to the foundation as well as the donation of 1 euro in the sale of its characteristic agate bracelets.
