Fina Puigdevall wins three Repsol Suns for her restaurant Les Cols
Fifty inspectors and more than 1,300 restaurants visited throughout Spain during 2019 to make a list, that of the Soles of the Repsol Guide, That this 2020 has awarded the distinction to 102 establishments raising to 545 the number of those who are already part of it.
The San Telmo Museum in San Sebastián hosted the awards ceremony for these Suns, which can already say loudly that They are present in all the Spanish provinces and, for the first time in the 41 years of the Repsol Guide, in the autonomous city of Ceuta.

And the fact is that, as the director of the Repsol Guide, María Ritter, explained, his inspectors have been glued to the street to publicize the potential of Spain's chefs. "Putting the focus on projects in less visible areas and continuing to support the potential of so many women who are an essential part of this sector is in the DNA of this guide."
Thus, of the 102 distinguished restaurants, two of them, Les Cols, by Fina Puigdevall (Olot) and Culler de Pau, by Javier Olleros (O Grove) , have been made with three suns , among other things, for the work they do to preserve the identity of their surroundings and dig into their roots.
The rest of Soles have fallen to 23 establishments that have added their second award and 77 that have achieved this recognition for the first time.
All this in an edition in which the Repsol Guide has changed its rating system, developing it with the advice of the Basque Culinary Center a methodology that wants to reflect the global customer experience, from the time you make your reservation until you leave the restaurant.
This system has also included aspects such as sustainability, kilometer zero, integration, circular economy or project coherence reflected in the kitchen, staging and cellar.
