Helene Darroze (with restaurants in Mayfair and Paris ) has been awarded as the Chef of the year 2015 , we like Darroze, her passion for the product and that she inspired the character of Colette in the film Ratatouille.

Like every year, the entire gastronomic sector looks towards 50 Best Restaurants (from The Restaurant Magazine and sponsored by S.Pellegrino & Acqua Panna) the list of lists , the recognition that yes —but no. That raises more passions and also more rudeness; known are those of Dabiz Muñoz: “The true posture of haute cuisine is the 50Best and you all know it…” ; and the most resounding of Martín Berasategui: “The Restaurant list is a montage”.

IS IT JUST 50 BEST?

Reasonably. Almost 1,000 professionals from all over the world vote confidentially (through a web page), divided between great chefs, restaurant owners and food journalists . The Restaurant divides the world into 27 regions and each region has its own panel of 37 experts . In Spain, the person in charge is Roser (from the line of the previous president, Rafael Ansón). How are these 37 experts chosen? Roser Torras chooses them and there is no more talk.

Every "expert" vote for seven restaurants , of which at least three votes must be for locals located outside their region (and they must have eaten at some time in the last 18 months) . This last point obviously remains in the hands of the "honorability" of the voter. Come on, it doesn't matter.

Is there a closed list of restaurants to vote for? Absolutely not. 50 Best bets on the boom of drastic changes and therefore: open lists. In other words, if the above signer (will he be a voter?) decides to plant the palentine as the best restaurant in the world, you are right. They imagine?

WHO BENEFITS?

To two types of restaurants. First to “hot” restaurants —those that are in fashion, in the mouths of foodies from all over the world (Noma, DiverXo, Alinea…). Because here it is not about being better than another, but to be more visited than anyone by the judges on duty (therefore, it is easy and likely to repeat in the Top10).

Second to those who are well placed from a strictly geographical point of view , no more. That because? Because it is more likely that a judge will visit Donosti on his gastronomic route (and therefore Mugaritz, Arzak, Nerua, Azurmendi or Etxebarri ) than Puerto de Santa María.

WHO DOES IT HARM?

To the latter and also (let's be clear!) to those who as a rule do not invite those "gastronomic professionals" or lay a red carpet before the expert on duty. You don't have to be a genius, right?

But let's not get stingy. Today is a day of celebration and revelry. Long live the Roca Brothers.
