Restaurant of the week: Volt or the restaurant of nature in Stockholm
the chefs Fredrik Johnson and Peter Andersson they made their dream come true of creating the restaurant they would like to come back to again and again when they opened Volt 9 years ago. Located in the Swedish neighborhood of Ostermalm you can get confused with a art Gallery of the many that abound in this neighborhood of Stockholm and it is that its windows show modern sculptures that confuse anyone.
But once inside there's no question where are you or what are you going to find here : a relaxed atmosphere , a cozy lounge with dim light and a few tables that are occupied from six in the evening until the full sign is posted.
And so the restaurant is filled every night with 30 diners willing to enjoy a 7 course menu that connects with the nature and that feeds on a proximity product. No trompe l'oeil.
we found the vegetable as lead actress of (almost) all the dishes being the protein a mere companion who praises her. perfect points and a lot of flavor in every combination offering visually easy passes and clean presentations bordering on minimalism and in which a overwhelming finesse with a lot of technique behind.
The volt's kitchen is renewed each season with the aim of offering the freshest ingredients possible from the hand of its producers who are a fundamental part of the concept that they have here of what a restaurant is.
In this way, the dishes are thought and they start cooking long before they reach your table , go through tests and more tests of products, cooking and combinations until you find the best result.
Vegetables, Volt's raw material
They remain to remember red cabbage cooked al dente with almonds and Parmesan cheese or the plate of stuffed cabbage leaves in a dumpling parfait . Only one of the passes has meat as the only ingredient: a tender loin of venison with light touches of wood due to the oak on which it has been cooked.
The desserts They also boast of move away from the traditional sweet and it is a proposal that is increasingly appreciated.
And to accompany this festival, the wine list offers, of course, ** pure biodynamism ** with a large section dedicated to champagne from small producers and in which finding bottles for enjoyment is not complicated at all.
The service accompanies an unforgettable evening in which it is clear that Volt is Swedish cuisine of proximity, product and balance . a delight
