“My concept is very simple: everything is fresh, nothing is frozen and we always use quality and local products”, tells this award-winning pizzaiolo. From basil to tomatoes to vegetable toppings, they buy them from local suppliers. But from a little further away comes the one that forms the basis of his success: the flour, with which they make the thin, crispy dough, is produced on an Italian farm just for him. They ferment between 72 and 96 hours and once in the oven, they are ready in less than three minutes.

Renato's story is one of those of the American dream. He learned to cook attached to his mother's apron, in Agropoli (Salerno). He says that he was only four years old and got up early to prepare the day's meals with her. Later, as a teenager, he traded friends and games for working in pizzerias, instead of playing video games or records, he spent his salary on culinary accessories, like his first industrial-size dough mixer.

That fine dough is the secret of Renato Viola.

He is not self-taught, because he has been learning from many pizza makers and cooks throughout Italy, but he has been a tireless worker until he found his own recipe and perfected a skill by turning the dough that took him on tour winning prizes in Europe. A success that encouraged him to try his luck in the United States. He moved to Miami and there, thanks to his recipe, he got the O-1 resident visa, known as the “artist visa”, granted to people with “extraordinary ability”. From there, the name of his restaurants, Mister O1 Extraordinary Pizza, was born.

And why are they extraordinary, that is, unique? In addition to the mass is its shape: like an eight-pointed star, each corner filled with ricotta. Pizzas that he calls Star and surnames, in general, with the name of a loyal customer or friend.
