Specifically, the Araldo recipe, which its owners, Vittorio and Sonia, they have been perfecting since they opened his Verona pizzeria in 2004, is made with “semi-wholemeal organic flour stone-ground (made from non-GMO wheat, so it's free of harmful chemicals), sourdough with rest of at least 60 hours –at controlled temperature and humidity– and extra virgin olive oil as basic raw material.

So much technique for a result that at sight and, above all, at taste will convince you of its difference. And they also tell it to you to explain because (really) it is much lighter.
