Recently opened in Madrid (and already followed by another location in the city of Bilbao), Misska is a reflection of what Pedro Lee missed the most from his country, Taiwan: “Street food”, he says. "When I go there it's the first thing I do, go to the stalls, each one sells a different type of food." Although he has always had a favorite, without a doubt: "Guo bao, which is Chinese bread stuffed with different things. And what he wanted was to bring it to Spain." As before, he brought a lot of other gastronomy.

Pedro Lee has been living in Spain for 44 years. “I came to Salamanca to study medicine and after a year and a half I realized that it was not for me”, he has a perfect Spanish vocabulary. He went to work "to make money" in hospitality and loved it. He decided to open his own restaurants. "My mother always told me: 'Why do you study medicine, if you end up opening a restaurant,'" he laughs.

The first was Mr Lee in Bilbao, “the second Chinese restaurant in the city”. Later, in 1995, he opened with a partner the Chinese restaurant of the Hotel Villamagna in Madrid. “Until then there was only the cheap neighborhood Chinese with fried rice and chicken with almonds, and I started to bring better new products and dishes that are now in many places,” he explains. And, in the end, he moved to Madrid and in 2000 he opened Saigon Coffee (which has now reopened in a new location), his pretty girl.

He also responds to the "young spirit" of him, how he defines himself, despite his age, which he does not hide (“I am almost 70 years old, but I am like a child,” he says).

In fact, Misska is an attempt to show Madrid his favorite dish since he was young. With recipes that he has been trying and trying until he finds his favorite Taiwanese flavors. "When I was a student, I loved baths, everyone said to me: 'Again with a bath?' And I told them: 'Yes, my name is Lee Bao', he counts. Misska means “gastronomic” because he has not wanted to restrict himself and in the menu he has added more street dishes from other countries (sushi, poké bowl…), but he almost called him Lee Bao.
