There are eternal dishes like the Prawn carpaccio with sour cream and smoked caviar or the irreplaceable Iberian pork skin with Norway lobster and creamy poultry broth along with new creations, such as the Nettles with Imperial caviar and celeriac puree or the splendid red mullet with hazelnut and watercress pesto and sparkling Calvados juice, pure harmony.
