Inspired by one of the biggest fast-casual success stories in the US (Chipotle), two partners and friends set up two years ago, JLeo's (Galileo Street, 17) . It was about bringing the **DIY (Do It Yourself) ** philosophy to a meal that was fast and economical and not for that reason lose in quality. And after the success, they open a new place still in Chamberí.

The idea was to unite the gastronomy of Lower California, that is, tacos and burritos, with ingredients closer to us: Mediterranean. A merger they called Med-Mex and that pairs perfectly.

They spent time finding the recipes they wanted, with professional chefs. Meat stews that would go inside those tortillas, unique sauces that they make every day and always, always with fresh products.

“At Jleo's one of our pillars is the freshness of our raw material”, says José Trillo, one of the partners, the J of Jleo's. "So we buy our meat directly from farmers, to ensure that they have been raised in freedom (out of cages) and have been fed with natural, unadulterated feed."
