Where are gastronomic trends going?

I like to explore the universe (so inane, so many times) of artistic trends. “The new”, what will come. Avant-garde, the front line of the battle — those who open paths.

These days it is easy to find excellent chronicles (**that of Marta Fernández Guadaño** or the usual touches of smell among the chronicles of Philippe Regol) of what has been this two thousand and fourteenth and the clues of what will come in the panorama Spanish and international cuisine. I don't know if the model of the great restaurants and Haute Cuisine is definitively exhausted —but it is evident that every time (in the pages of the specialized gastronomic media and after the speeches of top chefs) there is less and less interest in new cooking techniques and more concepts.
