Who has not fallen in love with the coquettish garden of the Linares Palace it's because he hasn't had the luck to meet him yet. It's one of those places that with its beauty it makes you stop to see what it hides behind their gates.

Located in the walk of Recollects , in full Plaza de Cibeles , this elegant historic building welcomed the past August 16th to a new gastronomic proposal that has been baptized with the name of the Marchioness of Linares: Raimunda.

In the Palacio de Linares, **current headquarters of the Casa de América**, we no longer only breathe enigmatic legends , now the aroma of the typical delicacies of Ibero-American cuisine merges with that of the native dishes more genuine, perfuming a luxurious environment where the plants clothe you.

“We got the opportunity, through a good friend, to participate in this project and we felt we couldn't pass up the opportunity to do something in this space.

We think it is a spectacular garden, probably one of the most impressive spaces in Madrid , and we wanted to put this in the spotlight. He alone is capable of captivating you," he says. Paco Talavera, partner of Raimunda, to Traveler.es.

This new incorporation of the hotel group Factory -which already has in the capital some restaurants like Matute, ** The Bobia ** or the 21 - has wanted to pay homage both to the palace, its name is proof of this, and to the Casa de América, with a card that winks at these lands.

And, of course, respecting the essence of this magnificent location. The decoration has been the work of the Madrid in love interior design studio , who has successfully renovated the space, in collaboration with Global Start.

The restaurant is divided into three spaces : an indoor area, which is scheduled to open on October 15; a more informal terrace where you can enjoy a cocktail to the rhythm of the music played by the DJ; and another that will make you value the pleasure of eating surrounded by green.

EAT LIKE A MARQUIS

In the letter, proposed by the renowned chef Sergio Fernandez , the exotic flavors of the Iberoamerican gastronomy they wink at the stage where they are served. But, of course, they could not miss dishes of a lifetime.

We wanted to respect traditional Spanish cuisine , which we believe must always be present, but we are at Casa América and it is evident that references to its gastronomy had to be made.

We were aware that what is enriching is the fusion of cultures, that is why we decided to make a menu with typical dishes such as Iberian ham croquettes or fideuá and at the same time recipes like guacamole with tortilla chips or butterfish ceviche ”, explains Paco Talavera.

“There are many dishes that we have loved give them a twist. For example, rib roast -which is made to 60 degrees for 16 hours , with a very tender and super juicy cut- in other houses we dress it with a sauce of reduction of wine . Here, however, we do it with one of mole poblano, to wink at Latin America ”, points out Paco Talavera.
