Brunch, the house specialty
If we can take something positive from this pandemic, it is that it has taught many of us here present to go slow , to stop, to reconsider and enjoy those little things that are the ones that really matter. A walk in the countryside, a breakfast with the sunrise on the screen, a reunion with lifelong friends, a family getaway, a good movie in an improvised summer cinema in the garden or a good book in the warmth of the rooms.
All this and much more is Recoveco House, the new project of the couple formed by Jorge Bernaldo de Quiros and Jonathan Ansiporovich that has just opened its doors in the municipality The mills –specifically in the Sierra de Guadarrama – and 50 minutes by car from Madrid.
The protagonists of this story are authentic lovers of the tranquility of the countryside, outdoor sports and good food; so they did not hesitate to move all those pleasures to an enclave in the form of a house called Recoveco House.
All rooms are different and with their own personality
The origin of a dream
Is house in the Sierra Norte de Madrid It is the dream come true of Jorge (investment consultant, graduate in Business Administration from the UAM and in Actuarial and Financial Sciences from the UCM and Master in Portfolio Management from the UAM) and Jonathan (professor of special education from the UCM). Both passionate about travel, there is no boutique hotel, brunch or food in the lobby of any accommodation that can resist them and that is where the idea of Recoveco House.
“Despite being the place where we live, we are facing a house with a century of history that deserves to be shared with guests in search of rest and good times . With a strong identity inspired by Malasana –neighborhood in which we have lived for more than 15 years–, both aesthetically and in the way in which it is enjoyed, away from the rural cliches , is intended for hipsters looking to rest in a charismatic destination less than an hour from Madrid”, Jorge and Jonathan tell Condé Nast Traveler.
It was two years of searching that the couple used until they found the perfect home. At first, the intention was to buy a small country house of about 50 m², not far from Madrid and accessible by public transport from the center of the city where they lived until six months ago. But during all that time nothing convinced them, so they considered the possibility of even acquiring a plot and building the house themselves.
Recoveco House is capable of combining design and industrial aesthetics with welcoming and modern spaces.
“It was then that we went to visit a piece of land in Los Molinos and discovered the beauty of its stone houses from the beginning of the 20th century and there was Recoveco House, which at that time was called the terraces , abandoned for more than thirty years and in which he lived the passionflower on his return from Russia. It was love at first sight . It was too big and beautiful, so we decided not to give up living in this unique place and share it with city guests like us, who they would like to escape from Madrid from time to time but without having to drive more than an hour to get there” says the couple.
The name comes from a couple's plan that they started three years ago, where every weekend they invited two friends to try their typical dishes from brunch . “It was like a kind of challenge or little competition where Jonathan was in charge of the sweet dish and I was in charge of the savory one. We had to cook them with the greatest love in the world to meet the expectations of our guests and beat the 'game'. That's how it started Nook Brunch . Following this legacy, our new house could not be called otherwise”, indicates Jorge.
Urban and Malasañera aesthetics in the Sierra de Guadarrama
**The essence of a Malasaña apartment with a cozy cottage **
Once the house was found, they needed two more years of work, coordinating their respective trades, looking for national and international suppliers and searching the Internet for everything they might need to turn an abandoned house into a home.
“We were clear that we wanted run away from stereotypes of a rural house and had to incorporate nods to the Malasaña neighbourhood, from antique furniture –we love walking through El Rastro, flea markets and antique shops–, hydraulic tiles, the black as a common thread, ocean blue to give it that color point, a lot of wood and rooms with a lot of personality and that touch that reminds you that you are in a house with the warmth that this implies”, they comment.
In the lower part is where the owners and hosts sleep, while Upstairs there are three bedrooms with their private en-suite bathrooms for vacation rentals for their guests. And of course other rooms of a home such as the dining room, the office or the kitchen.
"The black , the fireplace, the bookcase and the desk are the common denominator of all the rooms in the house. The rest of the details and design It is unique in each of them, from the distribution, the floors, the color of the walls or the wallpaper used. We would like our guests to feel at home but with touches of comfort that they may not have on a daily basis: such as bookcases, free-standing bathtub, double shower, views of the mountains, four-meter ceilings (five in the case of the tower room) with its original visible beams, private balcony or terrace”, indicate the hosts.
In short, and in the words of Jorge and Jonathan: “Recoveco House is a house with history and a lot of charisma in the Sierra de Guadarrama in which we, its owners, seek to offer rest through the vacation rental of our rooms”.

Now that the house has already begun to receive its first guests, it is time to continue advancing in this project that promises to become a success. The next steps? Put the garden and pool ready so that it can be enjoyed during the summer of 2022.
For the entire landscaping and swimming pool project they have decided to trust the misture study . “We fell in love with them and their proposal from the first contact, only the work is worth framing. If Recoveco House is already beautiful, wait until you see it next year”, comment its owners excitedly.
“Both the pool and the landscaping we want to integrate well into the Sierra de Guadarrama , the main guideline that we have given to Misture is that we want to feel that when walking through our garden we believe that we are doing it for the same saw. Broom, rockrose, thyme, lavender, oak, cedars, ivy, moss and granite... a lot of granite!” they add. And, of course, there will be no lack of summer cinema , another plan that always fascinates in the months of good weather.
On a personal level, but also at work, as soon as they recover financially, the couple's intention is to get married here and that their wedding serves as a starting point to rent the space to celebrations in petit committee among friends or family.
“We provide the house and we can offer you a list of suppliers so that the event is perfect. They have already contacted us to make withdrawals from yoga or for advertising shoots and even films , we are very excited!”, they comment.
