The Del Cerro brothers, Fernando in the kitchen and Armando in the cellar , have collected the legacy of this house in which cooking is a very serious matter and where special importance is given to vegetables, which are supplied by the producers of the neighboring orchards of Aranjuez (although there are also meat and fish dishes).
Two differentiated spaces, on the lower floor, the bar and the atelier; upstairs, the restaurant.

Brothers Munoz, Iván in the kitchen, Raúl in the living room and in the cellar , are the generational replacement of this restaurant, whose cuisine reflects the spirit of Madrid like few others: many roots but open to the world and to new times.
This swarm of influences can be seen in its Ruta de las Vegas menu (€90 without selected wines, €130 with wines), in which, starting with the oil of Madrid , take a walk through recipes from the region and La Mancha through dishes such as cod with orange and piparra , the marine morteruelo with aubergine from Almagro or the socarrat rice with scallop and aliol i to end with a saffron macaron.
A good example that the great cuisine of Madrid is not limited to the capital.
