Clever!

When you have them, give them joy with this recipe in which some simple (not simple) garbanzo beans and a succulent chorizo they add points to a light and powerful dinner in flavor.

Ingredients:

  • ½ cup chickpeas (precooked and drained)
  • 1 lime
  • 8 sprigs of coriander
  • ¼ cup Greek yogurt
  • Salt
  • 2 fresh chorizos (about 200 g)
  • 4 pieces of toast

Preparation:

  • 1. Measure ½ cup of garbanzo beans . Grate the skin of one lime into a small bowl. Cut the lime in half and squeeze the juice from one half into a bowl. Cut the other half into wedges.

  • two. Put the coriander on a cutting board. Starting with the stems and chopping finely until you reach the leaves. Remove the leaves and use later as decoration . Put the stems in the bowl with the lime. Add the yogurt and mix . Season with salt.

  • 3. After removing the skin, heat the chorizo in skillet over medium heat, breaking up with wooden spoon until partially cooked (about 3 minutes). Add the chickpeas and season . Continue heating while mashing some of the chickpeas with the spoon until the chorizo ​​is fully cooked and crisp, about 8-10 minutes. Remove from fire.

  • Four. Spread yogurt on toast . On top, place the chorizo ​​with the chickpeas and decorate with the coriander that we had reserved. Serve with lemon wedges to garnish before eating.
