The Miragoli brothers' bakery and cafeteria, One Hundred and Thirty Degrees (One Hundred and Thirty Degrees), has just received the award for Best Bread in Madrid 2020, in the third edition of this annual contest convened by the Matador Club,

The aim is to vindicate the profession of baker and the quality of an essential product in Spanish culture and gastronomy.

The president of the jury, Jose Carlos Capell , has highlighted the winning piece “the perfect balance of the loaf, crispy crust, intense flavor of cereals and beer, a crumb with a balanced alveolus and a soft and fluffy texture”.

The rest of the jury was made up of Telmo Rodriguez (winemaker and vice president of Club Matador), John Manuel Bellver (Director of Lavinia and food critic), pillar rooms (journalist expert in gastronomy from Agencia EFE), Rachel Castle (food journalist) and the winner of the last edition, Panem's master baker Antonio Garcia.

One Hundred and Thirty Degrees has competed with five other finalists: John Torres, Obrador San Francisco, Pan.Delirio, Panadarío and Viena La Baguette.

All the participants presented two one kilo loaves made only with wheat flour, water, yeast and salt , which were assessed based on five criteria: appearance, cooking, crumb, smell and taste.

This award for the brothers Alberto and Guido Miragoli, artisan bakers from Ciento Treinta Grados, In his own words, it represents “a milestone in our trajectory. Starting a project from scratch in Madrid three years ago and receiving recognition of this type is always a great satisfaction".

"It is a moment that we are undertaking, generating jobs, three years in which we have made a lot of effort and this award is one of the small fruits that our work is giving”, conclude the Miragoli.

The Miragoli brothers' bakery has two locations, the workshop at Calle Fernando El Católico, 17, in the Chamberí neighborhood and a stall in the Mercado de la Paz, in the Salamanca neighborhood.

In addition to the certification that certifies him as the winner of the third edition of the Best Bread in Madrid award, One Hundred and Thirty Degrees becomes the official supplier of the Matador Club for one year.

The Best Bread in Madrid is an initiative inspired by the contest that has been organized in Paris for 25 years to choose the best baguette in the city, in which the winner becomes a supplier to the Elysée Palace for a year.
