La Elisa, the Madrid tavern that comes back to life

Taberna de la Elisa, the return of a classic

In The Elise they did not want to rediscover the Madrid tavern, but to recover what we have in our memory, those taverns you used to go to with your parents and you didn't even know what to ask for because you wanted everything.

There are no nods to modernity, here everything is genuine and very traditional. And more so at a time when it seems that the trend is to go back to the old days, to the usual flavors, to turn purple dipping bread and for things to taste like they should.

Just a few months ago, the three partners of Triciclo (Javier Goya, Javier Mayor and David Alfonso) saw it clearly. whatever was a celtic Tavern, left his premises just a few meters from the mother house, Triciclo, in the same Santa Maria Street . They couldn't pass up the opportunity.

Despite being a pub with an Irish spirit, they found that the local he breathed casticism on all four sides : typical wood and tin bar, tiles, shelves where they displayed beers... They have barely touched the premises and that makes La Elisa knows something 'of all life'.

The site struck a chord with them and also turned on the light bulb to complement their other stores. “Another cold room, one more kitchen where we can support our catering...”, comments Javier Goya to Traveler.es while he reviews the place with his eyes. That at the top. If you go down a ladder, you will find a dining room with tables and capacity for 30 people , in which they plan to put marble tables to continue in that usual tavern roll.

Elisa's Tavern bar

Elisa's bar, where so many beautiful things will happen...

The menu is divided into four sections and most of the dishes can be ordered as half portions.

To get started, 'with the hand of a bite' , a section with creations to eat with your hand and eat them individually: gildas, aubergines from Almagro, oysters, a spectacular homemade foie terrine , pork rinds, crispy cod, a stuffed mushroom, further worked with a farce made of mushroom with foie, a quail egg and a little Iberian ham on top... In addition to creamy Iberian ham croquettes or tiger mussels.

People may find a tiger expensive for 3 euros , but ours are not the typical croquette dough, they contain pieces of real mussels, in addition to the work involved in peeling them, cleaning them... We prepare them spicy and they are scandalous”. Also in this section they have some sausages such as cecina de Astorga and a table of national cheeses.

The second section is 'the cañí flavor of Madrid by Triciclo' and here we find rations like marriage of anchovies and anchovies from Santoña, the fresh red prawn , which are served almost raw and fried upside down (they pour the hot garlic on top) , some fried squid legs , the homemade bravas with a good homemade sauce with dots of alioli, snails and another of the classics of any self-respecting traditional bar, the pig's ear (candied for four hours and then fried, to get a crunchy exterior with a sweet heart)

And they could not miss others shell references such as lamb trotters on the bone, Madrid-style tripe, lamb sweetbreads with tender garlic or battered snout. All with that concept of getting your hands dirty and having a good time without any hesitation.

The third section is dedicated to 'the orchard of Castile' with dishes such as the farm beans with stewed tail, the Manchego barbecue, the Russian salad with homemade marinated tuna and pickled spring onions and the Manchego ratatouille, among others. And finally, continuing with classicism, some sweet dishes such as rice pudding or tiles with vanilla ice cream and hot chocolate.

They have also made a strong bet well shot rods and for the wines of Madrid, which are served by the glass for between 2 and 3 euros, adapting to the type of venue they want to promote.

Definitely, in the Elisa they recover what was before , nail the flavors of yesteryear and what they achieve is that you stay wanting to try more.
